Small fillet – 600 g Potatoes – 350 g Onion – 100 g Herbs – to taste Butter – to taste Salt – to taste
For the dough: Flour – 450 g Kefir – 200 ml Sour cream – 70 g Butter – 60 g Sugar – 1 tsp Soda – ½ tsp. Salt – to taste
To grease the pies: Yolk – 1 pc Milk – 1 tbsp Sesame seeds – to taste
1/ Prepare the dough: In a bowl, combine the flour, sugar, and salt. Add the baking soda, which has been dissolved in kefir, sour cream, and melted butter. Knead the dough.
2/ Cover with plastic wrap and let it rest for 30 minutes.
3/ Prepare the filling: Dice the potatoes and boil them for 5 minutes. Finely chop the meat, shred the herbs, and sauté the onion.
4/ Mix all the filling ingredients together, season with salt and pepper.
5/ Divide the dough into 14 balls and cover them with plastic wrap. Roll each ball into a circle.
6/ Place a spoonful of filling in the center of each circle and fold the dough into a triangle, leaving a small hole in the center.
7/ Arrange the pies on a baking sheet, brush with a yolk beaten with a tablespoon of milk, and sprinkle with sesame seeds.
8/ Place a small piece of butter in the center of each pie. Bake at 180°C for 20–25 minutes.
